This is a very healthy recipe that can be a perfect postpartum meal. This is a very easy and simple recipe. Bajra and methi provide necessary heat to the body during winter. This can be a good breakfast or brunch or dinner recipe. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe. Ingredients: • 1/2 cup Bajra flour • A pinch of Salt • Water • 1 tbsp Oil • 1/2 tsp Cumin seeds • 1/4 tsp Hing • 1 tsp Green chili-Garlic paste • A pinch of Turmeric powder • 2 cups Fenugreek leaves • Water • Salt to taste • 1 tsp Ghee Method: • Mix bajra flour and salt well and add a little water at a time to knead semisoft dough. • Make small katoris or divashi from the dough and keep it aside. • Heat up oil in a pan and add cumin seeds, hing, green chili-garlic paste and fry well. • Add turmeric powder and mix well. • Wash fenugreek leaves well and chop them finely. • Add fenugreek leaves and fry well. • Add water, salt and bring it to boil. • When the mixture begins to boil add ghee. Mix well. • Add the bajra divashi and cover the pan. • Cook it together on medium heat for about 10 minutes. • Turn off the gas and methi divashi is all ready. • Serve it with lot of ghee. Croutons are all ready. • You can serve these as it is or sprinkle mixed herbs, chili flakes. Toss well. It is all time favourite to everyone. You can make this recipe at home in a jiffy if the rice is ready with you. This can be a good option to finish leftover rice too. The schezwan sauce used in this recipe is also made at home. It looks and tastes just awesome. You can try this recipe at home and drop a comment for me. DO not forget to like, share and subscribe. Ingredients: • 2~3 tsp Oil • 5~6 finely chopped Garlic cloves • 1 tsp finely chopped Ginger • 1 medium finely chopped Onion • Finely chopped French beans • Finely chopped Carrot • Finely chopped Capsicum • Finely chopped Cabbage • Boiled Rice • 2 tsp Schezwan sauce • 1 tsp Soya sauce • 1 tsp Black pepper powder • 1 tsp Tomato sauce • 1/4 tsp vinegar • Chopped Spring onion Method: • Heat up oil until smoky hot in a pan. • Add garlic and fry it for 30 seconds. • Add ginger and fry for just 15-20 seconds. • Add onion and fry for about 15-20 seconds. • Add French beans and fry for about 20 seconds. • Add carrot and fry it for about 15-20 seconds. • Add capsicum and mix well. • Add cabbage and mix well. • Add boiled rice, schezwan sauce, soya sauce, black pepper powder, tomato sauce, vinegar and mix everything well together. • You can use lemon juice in place of vinegar. • If you have added salt while boiling rice then no need to add any salt as sauces also contain salt. • If you haven’t added salt while boiling rice then add a little salt to taste. • Fry the rice well for about 3-4 minutes. • Add spring onion and mix well. • Schezwan fried rice is all ready. • While serving, garnish with spring onion. This is Pune, Maharashtra special recipe. Different spices are stuffed, rolled and fried. These taste just awesome. You just can’t stop yourself from eating more. Ingredients: • 1 cup Maida • 1 tbsp Besan • Salt to taste • 1/4 tsp Ajwain / Carom seeds • 2 tbsp smoking hot Oil • Water • 1 tbsp Coriander seeds • 1/2 tsp fennel seeds • 1/2 tsp Cumin seeds • 1 tbsp Sesame seeds • 1/2 tbsp Poppy seeds • 1/2 cup dry shredded Coconut • 1 tsp Red chili powder • 1/2 tsp Garam masala • Salt to taste • 1/2 tsp Sugar • Tamarind-Gudh chutney • Shev • Oil for frying Method: • Take maida in a dish. • Add besam, salt, ajwain and mix well. • Always crush ajiwain between your palms while adding so that it releases nice flavour. • Mix everything well together. • Add hot oil and mix well. • When the oil cools down a little rub it well to all the maida. • Add a little water at a time and knead stiff dough. • The dough should be soft at all. • Transfer the dough into a bowl, cover and rest it for just about 10 minutes. • Heat up a pan on medium heat. • Add coriander seeds, fennel seeds, cumin seeds and roast everything for just about a minute. Do not roast longer. • After about a minute or so add sesame seeds, poppy seeds and roast everything for about 30-40 seconds. • Add dry coconut and roast until it gets light golden color. • Transfer the roasted spices into a bender jar and add red chili powder, garam masala, salt to taste, sugar when these cool down a little. • Blend everything into fine powder and masala for bakarwadi is already. • Take the dough and divide it into 3 equal portions. • Make each portion nice and smooth. • Roll a portion into a little thin round disc. • The chapatti should be thin at the center and a little thick at the eges. • The chapatti should not be too thin. • Spread tamarind gudh chutney on the chapatti. • Add the masala on the chutney and spread it well. • Spread some shev on the masala. Leave some gap along the edges. • Roll the masala on the chapatti with rolling pin once. • Lift one edge and make tight roll. • Cut the edges off and cut the roll into about 1” vadi. • Press each vadi a little so that masala won’t come out while frying. • Do not press much. The vadi should retain its shape. • Heat up oil on low heat. • Drop the vadi into hot oil and fry it on low heat only for about 5-6 minutes. • Keep on stirring with a fork at the intervals. • When the vadi is fried well from on sides, take them out. • Bakarwadi is already. As they say in Marathi ” चहाला वेळ नसते पण वेळेला चहाच लागतो” is all true. Let it be monsoon or winter, tea is enjoyed in every season. Today we are making 2 types of tea, viz alyacha kadak chaha and another velchi chaha. I will be sharing few tips to make perfect flavoured tea. This is very easy and simple recipe. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe. Ingredients: Alyacha Chaha • 1 cup Water • 1 tsp Tea powder • 2 tsp Sugar • 1” grated Ginger • 1/2 cup Milk Velchi Chaha • 1 cup Water • 1 tsp Tea powder • 2 tsp Sugar • 2~3 Cardamom • 1/2 cup Milk Method: Alyacha Chaha • Heat up water and bring it to boil. • When water begins to boil add tea powder, sugar. • Add grated ginger and boil tea for about 2 minutes. • If you add ginger after adding milk or just before adding milk tea gets curdled. • To avoid this add ginger while tea is boiling before adding milk. • Add milk and bring it to boil again. • Do not stir the mixture. Just boil it. • Strain the tea and alyacha chaha is all ready. Velchi Chaha • Heat up water and bring it to boil. • When water begins to boil add tea powder, sugar. • Peel the cardamom and pound it into powder in mortar and pestle. • Add the velchi skin into boiling tea. • When the tea boils well add milk, cardamom powder. • If you boil cardamom with tea then the it won’t get the flavour. • If you overcook any spice its flavour is removed. • So never add cardamom while boiling tea. • Boil the tea well and strain it. Velchi chaha is all ready. It is healthy too as it contains spinach and paneer. This can be a good breakfast or lunch box option. It tastes just awesome. You can try this recipe at home and drop a comment for me. Ingredients: • 1 cup Water • Spinach leaves • 1~2 Green chilies • 2 Garlic cloves • 2 cups Wheat flour • Salt to taste • Oil • 250 grams Paneer • Finely chopped Coriander leaves • Chili flakes • Grated Garlic • 1 tsp Garam masala • 1 tsp Kasuri methi • 1/2 tsp Cumin powder • Salt to taste • Ghee Method: • Boil water in a pan. • Add spinach leaves and boil for just 3-4 minutes. • Transfer the boiled spinach into ice cold water. Due to this the green color of spinach is retained. • Transfer the spinach into a blender jar and add green chili, garlic cloves. • Blend everything into smooth puree. Palak puree is ready. • Take wheat flour into a dish and add salt. • Mix well and add spinach puree. • Mix well and knead dough. • Use the water in which we have boiled the spinach if needed. • Spread a little oil and knead the dough once more. • Cover and rest the dough for about 30 minutes. • Grate paneer into a bowl. • Add coriander leaves, chili flakes, garlic, garam masala, kasuri methi, cumin powder, salt and mix everything well together. • Paneer stuffing is all ready. • Take the dough and knead it once more to make soft. • Divide the dough into 4 portions and take one of them. • Make it smooth and dip it in dry flour. • Make a pari from it to fill paneer stuffing. • Fill the paneer stuffing and close the edges. • Again spread dry flour and roll it into paratha. • Roll paratha carefully so that stuffing won’t come out. • Heat up a skillet on medium heat and transfer the rolled paratha on it. • Roast paratha really good from both sides. • After roasting a little from lower side, flip it over and roast a little form other side too. • Spread ghee on upper side and flip the paratha over. • You can use butter in place of ghee if you want. • Again spread ghee on other side and roast well. • When paratha is roasted well from both sides, take it off into a dish. • Palak paneer paratha is all ready. • Serve it with curd and pickle or you can have it as it is. • You can make about 3-4 parathas from 2 cups wheat flour. We already have seen sambar recipe. But today we will make udupi style sambar. We alsp will be preparing fresh sambar masala that tastes just awesome and gives nice flavour to sambar. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe. Ingredients: • 1 chopped Drum stick • 1/2 cup Tur dal • Water • 1 tsp Chana dal • 1 tsp Urad dal • 1 tsp Coriander seeds • 1/2 tsp Cumin seeds • 3 dry Red chilies • 1/4 tsp Fenugreek seeds • 1/4 cup fresh grated Coconut • 3~4 tsp Water • 2~3 tsp Oil • 1/2 tsp Mustard seeds • 1/2 tsp Cumin seeds • 1/4 tsp Hing • 6~8 Curry leaves • 1 medium size sliced Onion • A pinch of Fenugreek seeds (Optional) • 1/2 tsp Turmeric powder • 1/2 tsp Red chili powder • Chopped Bottle gourd • Chopped Carrot • 1 chopped Tomato • 1 tbsp Tamarind pulp • Salt to taste • Water • 1 tsp Oil • 1/2 tsp Mustard seeds • 6~7 Curry leaves • 3~4 dry Red chilies Method: • Take drum stick in a cooker pot and add water. • Wash tur dal 3-4 times well with water and add water. • Add water at the base of the cooker and place the dal at the base and drum sticks on it. • You can cook other veggies also along with drum sticks in cooker if you want. • Close the lid and cook on medium heat until 3 whistles. • For making sambar masala heat up a pan on medium heat and add chana dal, urad dal, coriander seeds, cumin seeds, dry red chilies. • Roast everything for just about 2-3 minutes. • The color of spices should not change but they should release nice aroma. • When spices begin to release aroma turn off the gas and add fenugreek seeds. • Transfer everything into a blender jar and blend it dry into fine powder. • Add fresh coconut and blend well once. • Add water and blend it into fine paste. • Sambar masala is all ready. • Heat up oil in a pan. • Add mustard seeds and let them pop up. • Add cumin seeds, hing, curry leaves, onion and fry for about 3-4 minutes. • Add fenugreek seeds, turmeric powder, red chili powder and mix well. • Adding fenugreek seeds is optional. You can skip it if you don’t like. • Add bottle gourd, carrot, tomato and mix well. • Udupi sambar contains potato. You can add peeled and chopped potato now if you like. Or you can boil potato along with drum stick and add. • Add water and cover the pan with lid. • Boil on medium heat until all veggies are nicely cooked for about 8-10 minutes. • Open the cooker and take the dal out. • Beat it really good until nice and smooth. • When the veggies are cooked well add cooked drum sticks, boiled dal, fresh blended masala and mix well. • Add tamarind pulp, salt and mix well. • Add water to adjust the consistency and simmer sambar on medium heat for about 8-10 minutes. • For tadka, heat up oil in a tadka pan. • Add mustard seeds, curry leaves, dry red chilies and mix well. • Add this tadka on sambar and mix well. • Udupi sambar is all ready. Ingredients: • 3 tsp Oil • Cumin seeds • 3 medium size finely chopped Onions • Finely chopped Green chillies • Ginger-Garlic paste • Chopped Tomato • 1 tsp Coriander powder • 1 tspGaram masala • 1 tsp Red chili powder • 1 tsp Oil • 1 tsp Besan • Salt to taste • 1/2 cup Water • 1 tsp Kasurimethi • Crumbled Paneer • Finely chopped Coriander leaves Method: • Heat up oil in a pan. • Add cumin seeds, onion and fry on medium heat until onion gets little deep golden color for about 7-8 minutes. • Add green chilies, ginger-garlic paste and mix well. • Add tomato and fry until tomato turns a little soft. • Add coriander powder, garam masala, red chili powder and mix well. • Fry everything well together for about 2 minutes. • Move the masala along the edge of the pan add a little oil in the remaining space. • Add besan and fry it well in oil for about 2-3 minutes. • Mix besan well with the masala and add salt. • Mix well and add water. • Mix well and bring it to boil. • After boiling the gravy for about 5-7 minutes add kasuri methi and mix well. • Add paneer and mix well. • Simmer on medium heat for about 5-7 minutes. • Garnish with coriander leaves and paneer bhurji is all ready. Though a fasting recipe it can be and is very favourite to everyone on non fasting day too. We already have seen 2 recipes of sabudana vada. Today we add a secret ingredient that will help sabudana to retain its shape after frying vada and that will help sabudana vada to be crispy outside and light, soft inside. I will also tell you many tips so that vada won’t burst in oil while frying. You can try this recipe t home and drop a comment for me. Do not forget to like, share and subscribe. Ingredients: • 1 1/2 cup Sabudana / Sago seeds • 1 boiled and peeled Potato • Roasted Peanut powder • Green chili paste • Rock salt to taste • Cumin seeds • Finely chopped Coriander leaves • 1 tbsp Rajgira flour / Amaranth flour • Oil for frying • 1 grated Cucumber • 3~4 tsp Curd • Rock salt to taste • Sugar • Finely chopped Green chili • Finely chopped Coriander leaves • Roasted peanut powder Method: • Wash sabudana really good at least 3-4 times with water. • Soak sabudana in enough water for about 30 minutes. • Drain all the water and soak sabudana overnight or at least 5-6 hours. • Transfer the soaked sabudana into a dish. • Mash and add potato. • Add roasted peanut powder, green chili paste, rock salt, cumin seeds, coriander leaves and mix everything well together. • If you feel the mixture is dry then add a little water. • Add rajgira flour and mix well. • Rajgira gives nice binding and crisp to vade. • Roll vade from the flour in any shape and size you want. • While rolling vade add a little water in the dough and roll vade from that part of the dough. • While rolling apply a little pressure so that these won’t burst after dropping into oil. • Heat up oil in a pan on medium to high heat for frying. • Drop vade in hot oil and medium to high heat fry well from both sides. • After frying for about 2-3 minutes from one side, flip it over and fry from other side too. • When vada is fried well from both sides, take it out drain excess oil and transfer them into a dish. • Sabudana vada is all ready. • For making koshimbir take cucumber in a bowl. Do not remove water from it. • Add curd, rock salt, sugar, green chili, coriander leaves and mix everything well together. • Add roasted peanut powder and mix well. • Koshimbir is ready. • Serve sabudana vada with koshimbir or green chutney. Whole red lentils and rice cooked with masalas to make this delicious pulao MASOOR PULAO Ingredients ½ cup whole red lentils (saboot masoor), soaked for ½ hour 1½ cup Daawat Pulav Basmati Rice 4 tbsps ghee 1 tsp cumin seeds 3-4 cloves 10-12 black peppercorns ½ inch cinnamon stick 1 ½ tbsps ginger garlic green chilli paste 1 medium tomato, chopped 1tbsps chopped fresh coriander leaves+ for garnish 2 tbsps ghee 1tsp red chilli powder ¾ tsp coriander powder 1/2/turmeric powder ¾ tsp cumin powder ½ tsp garam masala powder Salt to taste Raita for serving Method 1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times. Add fresh water and soak for 20 minutes and drain. 2. Heat 2 tablespoon ghee in a pan, add cumin seeds. let them change colour and add cloves, black peppercorns, cinnamon stick and sauté for a minute. 3. Add ginger garlic green chilli paste, mix and add tomato, fresh chopped coriander sauté for 2-3 minutes on a medium heat. 4. Add whole red lentils (saboot masoor) and mix well, add remaining ghee, red chilli powder, coriander powder, turmeric powder cumin powder, garam masala powder ,salt and mix, cover and cook for 2-3 minutes. 5. Remove the lid, add soaked Daawat Pulav Basmati Rice and mix gently. Add 2 cups hot water and adjust salt, mix gently, cover and cook for 15-20 minutes. 6. Ingredients: • 2 Potatoes • Ginger-Garlic-Green chili paste • Coriander leaves • Salt to taste • 1 tsp Lemon juice • A pinch of Hing / Asafoetida • 1/4 tsp Turmeric powder • 1 tsp Oil • Bread slices • Water • Oil for frying Method: • Boil the potatoes and peel these. • Mash the potatoes and keep them aside. • Heat up oil in a pan. Add hing and ginger garlic green chili paste. • You can decide the quantity of the paste according to your taste. • Fry the paste for about a minute and turn off the gas. • Add turmeric powder and mix well. • Add mashed potato and salt. Stir well. • Add lemon juice, coriander leaves and mix well. Stuffing is already. • Do not heat up the mashed potato after adding it in tadka as it will release moisture on heating. • Take the bread slices and remove the edges. • If you don’t remove the edges then it will be difficult to seal the roll. • Take the bread slice and flatten it with the help of rolling pin. • Spread a little water on the slice. • Do not use much water just moisten it. • Take a spoonful of stuffing and make a roll of it. • Stuff the roll at the centre of the slice and moisten all the edges with a little water. • Seal all the edges and make a nice roll. Keep it aside. • Heat up oil in a pan. Drop one by one roll in it and fry on medium to high heat until these turn nice golden from all sides. • Keep on turning the roll at the intervals. • Take the rolls out into a dish and bread rolls are already. • You can serve bread rolls with any chutney. This can be a one dish meal. This is very easy and simple recipe. This is a most requested recipe. You can try this recipe at home and drop a comment for me. Ingredients: • 2 cups Wheat flour • 1/2 tsp Salt • 1/4 tsp Powdered Sugar • 1 tsp hot Oil • Water • White sesame seeds • 1 tsp grated Dry coconut • Poppy seeds • 2~4 tsp Oil • 1/2 tsp Cumin seeds • Cinnamon sticks • 2 Green cardamom • Cloves • Black pepper corns • Finely chopped Onion • 2 finely chopped Tomatoes • 1 tsp Ginger-Garlic paste • 1 tsp Coriander powder • 1 tsp Garam masala • Red chili powder • Water • Salt to taste • Boiled, peeled Potato • Green peas • Oil for frying Method: • Take wheat flour in a dish. • Add salt, powdered sugar and mix everything well together. • Add hot oil and let it cool down a little. • When oil cools down a little, rub it well to flour. • Add a little water at a time and knead stiff dough. • Transfer the dough into a bowl, rub a little oil, cover and rest it for at least 30 minutes. • Heat up a pan on medium heat. • Add white sesame seeds, grated dry coconut, poppy seeds and roast it well. • When it beings to get light golden color, turn off the gas. • Transfer everything into a blender jar and blend it into powder. • Heat up oil in a pan. • Add cumin seeds and let them splutter. • Add cinnamon, green cardamom, cloves, black peppercorns, onion and mix well. • Fry until onion gets nice golden color. • Add tomato and fry well for about 3-4 minutes until tomato is cooked nice and soft. • Add ginger-garlic paste, garam masala, red chili powder and fry everything for about 2 minutes. • Add the fresh ground masala and mix well. • Add water, salt and simmer for about 5 minutes. • Mash boiled potato a little with hands and add. • Add green peas and mix well. • Simmer for 5-7 minutes more. Aloo kurma is all ready. • Take the puri dough and knead it once more to make nice and smooth. • Take small portion of dough and make it smooth and even. • Roll it into a chapatti, not too thick nor too thin. • Do not use any dry flour while kneading but you can use oil if needed. • Cut it into small puries with the help of a daba or a zakan and take off excess dough. • Heat up oil in a pan. • When oil is enough hot drop puri in it and press it a little. • When puri gets nice golden color from lower side, flip it over and fry well until other side gets nice golden color. • Take the puri out, drain excess oil and transfer it into a dish. • Serve puri with kurma. Ingredients: • 1/2 cup Hulhe / Kulith / Madras gram • 1 tsp Oil • 1 tsp Cumin seeds • A pinch of Hing • 1 tsp Garlic-Green chili paste • 1/4 tsp Turmeric powder • Water • Salt to taste • Finley chopped Coriander leaves (Optional) Method: • Heat up a pan on medium heat and dry roast the huge for about 5-6 minutes. • When the hulge begine to release aroma turn off the gas and let them cool down a little. • Blend the roasted hulge into powder in mixer and hulgyache pith is ready. • You can store this flour in an air tight container for about 2-3 months. • Heat up oil in a pan and add cumin seeds, hing, garlic-green chili paste. • Fry everything together for about a minute. • Add turmeric powder, water, salt and bring it to boil. • When the mixture begins to boil, turn the gas to low and add 2 tbsp hulgyache pith. • Mix well. Make sure there are no lumps formed. • Simmer kadhan for about 8-10 minutes. • Add coriander leaves and hulgyache madge or kadhan is all ready. • Adding coriander leaves is optional. You can skip it if you don’t want. • You can have it as it is as soup. • If you want to make sweet madage then heat up ghee and add water, hulgyache pith. When it is almost cooked add gudh and mix well. Full Written recipe for Veg Kolhapuri Prep time: 25-30 minutes Cooking time: 25-30 minutes Serves: 5-6 people Kolhapuri base gravy Ingredients: • Oil 2 tbsp • cinnamon 1 inch • cloves 4-5 nos. • peppercorn 4-5 nos. • black cardamom 1 no. • green cardamom 2-3 nos. • cumin seeds 1 tsp • coriander seeds 1 tbsp • very spicy chilli 3-4 nos. • Kashmiri red chilli 7-8 nos. • poppy seeds 1 tsp • fresh coconut 3 tbsp • Water 50 ml Method: • Set a pan on low heat, add oil and the remaining whole spices, dry roast them on low flame for 1-2 minutes. • Further add the nariyal and stir & cook for 3-4 minutes on low flame or until the coconut has turned light brown in colour. Remove them on a plate & cool down to room temperature • Transfer them in a grinding jar, add water and grind into a fine paste. Keep it aside to be used later. For gravy Ingredients: For tomato cashew puree • Tomatoes 7-8 medium sized • Boiled cashew nuts 9-10 nos. For half fried veggies • Oil 1 tbsp • cauliflower 1/2 cup blanched • carrots 1/2 cup (diced) • green peas 1/2 cup • french beans 1/2 cup • onion petals 1/2 cup • capsicum 1/2 cup For gravy • Oil 1 tbsp • Jeera 1 tsp • bay leaves 1-2 nos. • Red chillies 2-3 nos. • Onions 2 medium sized (chopped) • Ginger garlic paste 1 tbsp • Green chillies 3-4 nos. (chopped) • Turmeric powder ¼ tsp • Kashmiri red chilli powder 1 tbsp • Water as required • Salt to taste • Kashmiri red chilli paste 5-6 tbsp • Paneer 200 grams (optional) • Garam masala 1 tsp • Kasuri methi 1 tsp • fresh coriander as required (chopped) • lemon juice 1 tsp Method: • For tomato puree, grind the tomatoes and boiled cashews together into a fine puree, keep it aside to be used later. • For half fried veggies, set a pan on medium heat, add oil, add cauliflower and stir fry on high flame for 1-2 minutes, remove in a bowl and keep it aside. • Further, in the same pan add carrots, green peas & french beans, stir & cook on high flame for 1-2 minutes. Remove in a bowl & keep aside. • In the same pan, add additional oil if required, stir capsicum & onions for 1-2 minutes on high flame, remove in a bowl & keep aside. • Set a wok on medium heat, add oil, jeera, tej patta & sukhi lal mirchi, stir cook on medium flame for a minute. • Further add onions, and cook until it turns light golden brown in colour. • Add ginger garlic paste & green chillies, stir & cook on medium flame for 1-2 minutes. • Further lower the flame and add turmeric & red chilli powder, stir & cook briefly for few seconds on low flame, further add the prepared kolhapuri base gravy and some water, to avoid any wastage, add l150-200 ml water and mix with the remaining paste in the grinding jar and pour it, stir and cook on medium heat for 4-5 minutes or until the ghee separates. • Add the prepared tomato cashew puree, salt to taste, stir & cook for 4-5 minutes. • Add the kashmiri red chilli paste, stir & cook on medium high heat for 5-6 minutes while stirring in regular intervals. • Now, add the stir-fried veggies, and stir well, do not mash the veggies while stirring. • Add some hot water if required to adjust the consistency of the gravy. • Add paneer, garam masala, kasuri methi, freshly chopped coriander leaves, lemon juice, mix well and cook for 1-2 minutes. • Your veg kolhapuri is ready, finish with some more freshly chopped coriander leaves, serve hot with some roti, naan or any indian bread of your choice. #YFL #SanjyotKeer #Kolhapuri The Music I use in All my videos - 🤍 (Best for independent creators) Follow us on all platforms: Facebook - 🤍 Instagram - 🤍 Follow my personal handles here: (Chef Sanjyot Keer) Facebook - 🤍 Instagram - 🤍 Twitter - 🤍

Ukdiche Modak or steamed coconut dumplings are served to Lord Ganesha as prasad / nevedya. Share on Facebook: 🤍 Tweet about this: 🤍 Ingredients 3 Cups Water 3 Cups Rice Flour 3 Cups Grated Coconut 1 1/2 Cup Jaggery 1 tsp Oil / Ghee 1 tsp Cardamom Powder Salt to taste साहित्य: ३ कप पाणी ३ कप तांदुळाचे पीठ ३ कप ओलं खोबरं १/२ कप गुळ १ tsp तेल / तूप १ tsp वेलची पावडर मीठ Method: To Make the Covering (Ukad) - In a pan heat some water. Add salt and ghee. - Then add the rice flour and mix everything well. - Switch off the flame and cover it for 10 minutes. - After 10 minutes spread the mixture in bowl and allow it to cool. To Make the filling - In a pan heat some oil. Then add grated coconut and jaggery. - Mix well till the jaggery melts completely. - Then add cardamom powder and mix well. Switch off the flame and let the mixture cool. To Make the Modaks - Remove the flour mixture into a flat bottom pan and knead the dough well. - Take out lemon sized balls of the dough and shape it into a small roti with your fingers. Apply oil to your palms so that the mixture doesn't stick to your hands. - Fill the small roti with the coconut filling leaving some space for folding it. - Pinch the outer covering with your fingers into small pleats and then fold them up. Join them and cover the filling completely. - Make all the modaks like so and keep them aside. - For cooking, fill 1/4th of the steamer with water. Cover it with the lid. If you are using a pressure cooker, don't put the vent valve. - Let the modaks steam for 10-15 mins and they are ready. You can also serve them with ghee. Here is the recipe for mawa karanji that you easily try. The stuffing is made from mawa or khoya and the cover is crispy. It just melts in mouth. Do try this recipe this Diwali and drop a comment for me. Do not forget to like, share and subscribe. Ingredients: • 2 cups Maida / All purpose flour • 1/4 cup Ghee • A pinch of salt • Water • 250 gm Khoya / Mawa • 1/4 cup Desiccated Coconut (Optional) • 1 tsp Chironji / Charoli • 1 tbsp chopped Almonds • 1 tbsp chopped Cashew nuts • 1/4 tsp Cardamom powder • Few Raisins • 1/2 cup powdered Sugar • Oil for frying Method: • In a dish take maida. • Add ghee, salt and mix ghee well with maida. • The mixture should be nice and crumbly. • Add a little water at a time and knead stiff dough. • The dough should be stiff and not soft. • Transfer the dough into a bowl, cover and rest it for at least 15-20 minutes. • In a pan take mawa and dry roast on medium heat until it turns light golden. • Transfer the roasted khoya into a bowl and let it cool down completely. • Add desiccated coconut, chironji, almonds, cashew nuts, cardamom powder, raisins and everything well together. • You can use shredded dry coconut in place of desiccated coconut. • You can skip the coconut too. • Add powdered sugar and mix well. Mawa stuffing is already. • Take the dough and knead it once more. • Take a small ball of dough and smoothen it. • Roll in into a small puri that is not too thick nor too thin. • Spread water along the edges, add stuffing, fold the puri in half and seal the edges. • You can keep the karanji as it is or make some design along the edges with the help of fork. • Transfer the karanji into a dish and keep it covered. • Heat up oil in a pan over medium heat. • Drop the karanji into hot oil and fry on medium heat until it turns deep golden from both sides. • After frying for about a minute from one side flip the karanji over and fry well from other side as well. • When karanji get nice golden color from both sides take them out and transfer into a dish. • Mawa karanji is already. • You can store these gujiya into an airtight container for about 3-4 days.
