Full written recipe for Veg Khao swe Prep time: 15-20 minutes Cooking time: 15-20 minutes Serves: 7-8 people For fresh homemade coconut milk (800 ml approx.) Ingredients: • Fresh coconut 2 cups • Water 2 cups + 3/4th - 1 cup Method: • Roughly chop the fresh coconut and transfer in a grinding jar, along with water, grind as fine as possible. • Use a sieve and a muslin cloth, transfer the coconut paste in the muslin cloth, squeeze well to extract the coconut milk. • Further reuse the pulp by putting back in the grinding jar, and add additional water, repeat the same process to extract maximum coconut milk. • Your fresh homemade coconut milk is ready, this will yield you approximately 800 ml of coconut milk. Keep aside to be used for making khao swe. For soup Ingredients: • Onion 2 medium size • Garlic 6-7 cloves • Ginger 1 inch • Green chillies 1-2 nos. • Coriander stems 1 tbsp • Oil 1 tbsp • Powdered spices: 1. Haldi (Turmeric) powder 2 tsp 2. Lal mirch (Red chilli) powder 2 tsp 3. Dhaniya (Coriander) powder 1 tsp 4. Jeera (cumin) powder 1 tsp • Veggies: 1. Farsi (french beans) ½ cup 2. Gajar (Carrots) ½ cup 3. Baby corn ½ cup • Vegetable stock / hot water 750 ml • Gud (jaggery) 1 tbsp • Salt to taste • Besan (gram flour) 1 tbsp • coconut milk 800 ml Method: • In a grinding jar add, onions, garlic, ginger, green chillies & coriander stems, add little water and grind into a fine paste. • Set wok on medium high heat, add oil & add the onion grounded paste, stir and cook for 2-3 minutes. • Lower the flame & add the powdered spices, add little water & cook the spices until it releases its oil. • Add the veggies & stir well, further add vegetable stock or hot water, gud (jagger) & salt to taste, stir & bring to a boil, cook for 5-6 minutes on medium flame. • Now, lower the flame and in a separate bowl add besan and a few tablespoons of coconut, mix well to make a lump free besan slurry. Further add this slurry to the coconut milk and stir well, make sure there are no lumps. • Now, add the slurry mixed coconut milk in the wok and stir well, now you can increase the flame to medium heat & let the soup simmer for 5-6 minutes. Stir in regular intervals. • Taste for the salt & adjust the seasoning accordingly. Finish by adding some lemon juice. • Khao swe / curry is ready and serve hot with other components. For Curry Heat oil in a kadai, add prepared paste and saute for a minute. Add coriander powder, turmeric powder, degi red chilli powder, add little vegetable stock and saute it well. Add carrot, baby corn, onion and saute for a minute. Add vegetable stock mix well. Add salt to taste, sugar and stir well. Cover it with the lid and cook on medium flame for 5 minutes. Add coconut milk and mix it well. Allow it to boil for some time. Add spring onion, coriander leaves and stir well. For Garnishing Take a serving bowl, add boiled noodles, top it with green onions, peanuts, chilli flakes, brown garlic and onions, lime juice, chilli oil etc. and then top with coriander leaves. For soup Ingredients: • Onion 2 medium size • Garlic 4-5 cloves • Ginger 1 inch • Turmeric 1 tbsp • Red chilli powder 2 tsp • Oil 1 tbsp • Carrots ½ cup (diced) • Mixed bell peppers ½ cup (diced) • Broccoli ½ cup • French beans ½ cup • Salt to taste • coconut milk 600 ml • gram flour (besan) 1 tbsp + water 500 ml Method: • In a blending jar add, onions, garlic, ginger, turmeric powder, red chilli powder and oil, grind into a fine paste. Foodies with Indian palate can also add 1 tsp coriander powder and jeera powder. • Heat oil in a wok, add the paste and cook for 3-4 minutes. • Add the veggies, salt to taste and cook for 2-3 minutes. • Add Coconut milk 600 ml, mix well and bring to a boil. • In a separate bowl add besan and water mixture, mix well, pass it through a sieve and add to the soup. • Boil and cook further for 8-10 minutes. Here’s my vegetarian version of the hearty Burmese khow suey! Learn how to get the authentic Burmese curry broth flavours, so you can tuck into this warm bowl of comfort food whenever you want a pick-me-up! Coconut Broth Full Recipe: 🤍 Curry Paste: 8-10 cloves Garlic ½ tbsp Ginger 3 tbsp Coriander stems only ½ tsp Whole Coriander Seeds 2 tsp Fresh Turmeric 2 Shallots ½ tsp Whole Peppercorns 2 Green Chillies Coconut Broth: 2 tbsp Oil 4-6 Garlic sliced 3-4 Shallots sliced 2 Birds Eye Chillies slit lengthwise 8-10 Curry Leaves 4 cup Vegetable Broth/Water 2 tbsp Besan Gram flour 2 stalks Lemongrass white part only ⅓ cup Carrot thickly sliced ¼ cup Green Beans cut into 1 inch pieces ⅓ cup Bell Pepper diced ½ cup Mushroom quartered 1 tbsp Soy Sauce 1 tsp Salt 1/2 cup cubed Tofu 1½ cups thick Coconut Milk Noodles: 250 gram Noodles 1 tbsp Oil 1 tsp Salt Toppings: 2-3 tbsp Coconut Oil ¼ cup Shallots thinly sliced 1 inch piece Ginger julienned 1 tbsp Garlic thinly sliced 1/3 cup cooked Noodles ¼ cup Groundnuts (peeled) 3 Green Chillies thinly sliced (optional) Instructions: Curry Paste: Grind all the ingredients into a smooth paste using a blender or food processor. Add a little water while blending. Set aside. Coconut Broth: Use a mortar and pestle to lightly crush the lemongrass for the broth. Heat oil in a large pot or wok. Add the garlic and saute lightly. As the garlic begins to gain colour, add the shallots, fresh red chilli and curry leaves. Stir and saute for 2-4 minutes until the shallots become slightly translucent. Add the ground paste and cook over a medium flame for 4-5 minutes or until the raw smell goes away. Add the gram flour and stir to combine. Cook further for 2 more minutes, stirring continuously. Slowly add the vegetable broth and keep mixing till there are no lumps. Add the vegetables, crushed lemongrass, soy sauce, salt and simmer for 20 minutes and let the flavours infuse well in the broth. You can simmer it for longer for a more intense flavour. Add tofu and coconut milk and mix well. Turn off the flame and set aside to serve. Noodles: In a stockpot, bring water to a boil. Add some salt and oil to the water to prevent noodles from sticking. Add the noodles and follow the package instructions to cook it. In the absence of cooking instructions, simply add the noodles and cook for 3-4 minutes or until the noodles are soft but still have a slight bite to it. Drain the noodles and give it a quick rinse in cold running water and set aside. Toppings: Heat coconut oil in a saucepan over low heat. Add sliced shallots and fry till it becomes golden brown. Use a skimmer to remove the shallots and place over a paper towel to remove excess oil. In the same pan, add garlic and fry till it browns. Remove and place over a paper towel. Now add ginger and fry it for a minute till the ginger softens. Remove and place over a paper towel. Next fry the noodles till golden brown to make it crunchy. Remove and place over a paper towel. Wipe down the pan and add the groundnuts and lightly dry roast them for 1-2 minutes and keep aside. Serving: To serve, assemble all the toppings on a serving platter. Arrange a bowl with fresh egg noodles, top it over with the coconut milk broth and add your choice of toppings and enjoy it hot! The Burmese Khowsuey features layers of noodles, a vegetable curry made with coconut milk and an elaborate masala of spices, coconut and cashew nuts, and an elaborate garnish of fried onions, garlic, vaal dal and spring onions. This gives the dish a unique texture and a really unforgettable flavour. Although this dish obviously involves too much effort, right from preparing the noodles and the curry to the garnishes, it is completely, absolutely worth it! Preparation Time: 30 minutes. Cooking Time: 40 minutes. Serves 4. Soaking Time: 3 hours. 4 cups boiled rice noodles To be ground into a smooth paste (using approx. ½ cup water) 5 whole dry Kashmiri red chillies 1½ tbsp coriander (dhania) seeds ½ tsp black peppercorns (kalimirch) 2 tsp cumin seeds (jeera) ½ tsp turmeric powder (haldi) 1 tbsp chopped garlic (lehsun) 2 tbsp freshly grated coconut 2 tsp chopped ginger (adrak) 2 tbsp poppy seeds (khus-khus) 1 tbsp chopped cashewnuts (kaju) For the curry 3 tbsp oil 2 bayleaves (tejpatta) 7 to 8 curry leaves ½ cup grated onions ¾ cup grated tomatoes 2 cups chopped and boiled mixed vegetables (French beans, carrot, green peas and cauliflower) 2½ cups coconut milk (nariyal ka doodh) Salt to taste For the garnish ½ cup garlic roundels (lehsun) 1 cup thinly sliced onions ¼ cup vaal dal (split field beans), soaked for 3 hours and drained Oil for deep-frying ½ cup chopped spring onions (whites and greens) ¼ cup finely chopped coriander (dhania) Dry red chilli flakes Salt to taste Lemon juice For the curry 1. Heat the oil in a deep non-stick pan, add the bayleaves, curry leaves and onions and sauté on a medium flame for 2 minutes or till it turns light brown in colour. 2. Add the prepared paste and sauté on a medium flame for 1 minute. 3. Add the tomatoes and sauté on a medium flame for 2 more minutes. 4. Add the mixed vegetables, coconut milk and salt, mix well and cook on a medium flame for 4 minutes, while stirring occasionally. Keep aside. For the garnish 1. Heat the oil in a deep non-stick pan on a medium flame, lower the flame, add the garlic and deep-fry on a slow flame till they turn brown in colour. Drain on an absorbent paper and keep aside. 2. In the same hot oil, add the onions and deep-fry on a slow flame till they turn brown in colour. Drain on an absorbent paper and keep aside. 3. In the same hot oil, add the vaal dal and deep-fry on a slow flame till they turn brown in colour. Drain on an absorbent paper and keep aside. How to proceed 1. Divide the curry into 4 equal portions. Keep aside. 2. Take 1 cup of rice noodles in a serving bowl, top it with one portion of the prepared curry evenly over it. 3. Garnish it with little fried onions, fried vaal dal, fried garlic, and spring onions evenly over it. 4. Finally sprinkle coriander, chilli flakes, little salt and lemon juice. 5. Repeat steps 2 to 4 to make 3 more servings. Serve immediately.

Now take a pan, put some oil and then add the paste and sauté for some time. Now add the turmeric and Besan into in and mix everything well. Add the stock or water and whisk the mixture for some time to avoid lumps. Now put all the vegetables one by one and add salt and cover the lid. Allow it to boil for some time. After the vegetables are boiled take it out from the flame. Take a serving bowl, add boiled noodles, top it with green onions, peanuts, chilli flakes brown garlic and onions, lime juice, chilli oil etc. and then add fried noodles on top of it and garnish with coriander leaves. Those who are non-vegetarians they can add stripes of egg and boiled egg wedges. Your delicious Khao Suey is ready. Enjoy! Garlic (sliced) - 2 tbsp Roasted Peanuts - 2 tbsp Lemon (wedges) - 3 nos Spring Onion (finely chopped) - 2 tbsp Red Chilli Flakes - 1 tsp Cooking Instructions: 1. Combine all the ingredients for the green curry paste and blend in a mixer grinder to a smooth paste with ¼ cup water. 2. Boil the noodles until tender with oil and salt, as per packet instructions. 3. Coat the drained noodles with oil and set them aside. 4. Heat oil in a pan and deep fry the onions and garlic individually until golden brown, on a medium flame. 5. Coarsely crush roasted peanuts and set them aside. 6. In a pan, heat oil, add the red chilli, curry leaves and turmeric powder. Add and fry the curry paste for 10 minutes until the raw smell and flavor goes. 7. Add the vegetables and saute for 3 minutes. 8. Add water, boil until the vegetables are tender. 9. Add the salt, brown sugar and soya sauce. 10. Add the thick coconut milk and basil leaves, bring to a single boil. Finish with lemon juice. 11. Serve with noodles and toppings as desired. Cooking Tips: 1. It is a power-packed recipe loaded with lots of veggies along with a warm broth made of coconut milk. It feels cosy already, isn't it? Ingredients: 200 ml Coconut Milk 2 tbsp Besan, gram flour 1/2 cup Carrot, diced 1/2 cup Baby Corn, chopped 1/2 cup Beans, chopped 1 tbsp Ginger, chopped 1 tbsp Garlic, chopped 1 tbsp Green Chilli, chopped 1/2 cup Onion Paste Salt as per taste 1 tsp Coriander Powder 1/2 tsp Turmeric Powder 1 tsp Jeera Powder 1 tbsp Jaggery or Sugar, as per choice 200 ml water 1 cup Boiled noodles For Garnish: Fried Garlic Fried Onions Roasted Peanuts Fried Noodles Sliced Onion Spring Onions Greens Recipe: In a small bowl, add besan, water & mix well to form a slurry. Now add this slurry to coconut milk and mix well. In a pan heat oil, add ginger, garlic & cook for a couple of minutes. Now add onion paste & cook till the water dries off. Once done add finely chopped green chillies, powdered spices, salt & sauté it Now add the veggies (carrot, baby corns, beans) cook for a 4-5 mins. Add water and give it a boil. Add jaggery powder or sugar & cook till it melts. Next add coconut milk mixture prepared in the beginning.(Make sure you turn off the flame while adding it). Turn on the flame & cook on slow flame for 2-3 mins. Take a soup bowl, add boiled noodles & pour the soup on it. Here is what you'll need to make Khao Suey Ingredients: 2 tbsp cooking oil 1 small onion paste 1 bay leaf 500 gm chicken (boneless small cuts) 1 tsp salt 1 tsp cumin (roasted) 1 tsp coriander 2 tsp ginger paste 1 tsp garlic paste ¼ tsp turmeric 2 tbsp besan/ gram flour 3 cups chicken stock (unsalted) 1 cup coconut milk salt 1 pack noodles Cucumbers (thinly sliced) Roasted peanuts (crushed) Roasted chili (a pinch) Fried onions Green onions (thinly sliced) Coriander (chopped) Fried flour roti Green chili (chopped) Instructions: 1. First, drizzle cooking oil into a pan and add onion paste - stir well. 2. Whilst continuously mixing, add a bay leaf and then place the small cuts of chicken into the pan. 3. Sprinkle salt and add cumin, coriander, ginger paste and garlic paste over the chicken - mix well. 4. Mix in turmeric and fry for 7-8 minutes. 5. Add besan; mix well and then add 3 cups of chicken stock - mix well. 6. Pour 1 cup of coconut milk, 1 cup of water and a sprinkle of salt into the pan - keep stirring well. 7. Simmer for 15-20 minutes on low heat. 8. Using a knife, cut flour roti into small rectangular pieces - fry in oil until golden crispy. 9. In a separate pan containing water, add salt and boil noodles (cook according to the package instructions). 10. Take the noodles out and place onto a sieve in order to drain out the water. 11. Place the noodles onto a plate and add cucumbers, roasted peanuts, roasted chilli, fried onions, fried flour roti, green chili and finally the chicken on top/ all over. 12. Your food is now ready to eat and enjoy! KHOWSUEY Ingredients 2 tbsps gram flour (besan) 1 cup coconut milk 1 tsp green chilli paste Salt to taste 2 tbsps sliced baby corns 2 tbsps chopped yellow zucchini 2 tbsps chopped green zucchini 2 tbsps broccoli florets 2 tbsps chopped carrot Boiled noodles for garnish Chopped greens of spring onions for garnish Chopped white bulb of spring onions for garnish Fried onions flakes for garnish Fried noodles for garnish Roasted peanuts for garnish Fried garlic flakes for garnish Red chilli flakes for garnish Lime juice for garnish Method 1. Heat a deep non- stick pan, add besan and lightly roast it on medium heat, stirring continuously. 2. Switch off heat. In a blender add roasted besan, coconut milk and blend to a fine paste. Add little water. Add green chilli paste and salt. Blend to a fine paste. 3. Heat a deep non-stick pan, add blended puree and ½ cup water. Mix well. Boil on medium heat, stirring occasionally. 4. Add sliced baby corns, yellow zucchini, green zucchini, broccoli and carrot. Mix well. Let it cook on medium heat for 4-5 minutes. Switch off heat. 5. Transfer gravy in a serving bowl. 6. Garnish with boiled noodles, chopped greens of spring onions, white bulb chopped, onions flakes fried, fried noodles, peanuts, fried garlic flakes, red chilli flakes, lime juice. 7. Serve hot. KHAO SUEY Ingredients 200 grams boneless chicken, cut into thin strips Salt to taste 1 tsp cumin powder 1 tsp coriander powder ½ tsp Tata Sampann Turmeric Powder 1 tbsp ginger-garlic paste Gravy 1 tbsp oil 1 fresh red chilli 1 tbsp ginger 1 tbsp garlic 1 dried red chilli 1 medium onion, chopped 12-15 broccoli florets 1 small carrot, cut into roundels 2 tbsps gram flour 2 cups chicken stock 2 cups coconut milk Salt to taste A dash of lemon juice To serve Boiled noodles Condiments Fried onions Fried garlic Spring onion greens Roasted peanuts 2 hard-boiled egg, halved Garnish Fresh red chillies slices Fresh coriander sprigs Method 1. Take chicken in a bowl, add salt, cumin powder, Tata Sampann Turmeric Powder, and ginger-garlic paste and mix well. Marinate for 10-15 minutes. 2. Diagonally slice fresh red chilli and set aside. 3. To make the gravy, heat oil in a non-stick pan, add ginger, garlic, sliced red chilli and dried red chilli and sauté for 1 minute. 4. Add broccoli and carrot and mix and cook for 2-3 minutes. Add gram flour and sauté for 2-3 minutes. 5. Add chicken stock and coconut milk and mix and cook for 6-8 minutes. Add salt, mix and cook for a minute. 6. Switch off the heat and add lemon juice and mix well. 7. To serve, take cooked noodles into serving bowls and pour a portion of the gravy in each bowl. 8. Sprinkle fried onions, fried garlic, spring onion greens and roasted peanuts. Place boiled egg halves and garnish with fresh red chilli slices and coriander sprigs. Khow Suey is a Burmese noodle dish with a spicy coconut curry sauce, so easy, yet so tasty! Serves 6-8 Ingredients: - Oil - 4 TBSP - Onion - 1 Large - Garlic & Ginger Paste - 1 TBSP - Chicken - 1 KG - Salt - 2 TSP - Turmeric Powder - 1 TSP - Chilli Powder - 2 TSP - Coriander & Cumin Powder - 2 TSP Each - Fresh Coriander - 1 Handful - Coconut Milk - 800ML - Gram Flour - 2 TSP - Water - 300ML - Spaghetti - 500G Directions: - Add oil & onions in a pan & cook until brown. When onions have browned add in your garlic & ginger paste. Leave to cook for 1 min then add your chicken & leave to cook for 5 mins. - Add in the salt, turmeric powder, chilli powder, coriander & cumin powder, then stir & leave to cook for 10 mins on medium heat. - Add in your fresh coriander & cook until oil separates (around 7 mins). - Add in your coconut milk then stir, add in the gram flour & water. Don't worry if it's a little lumpy when you add the gram flour, the lumps will disappear once you leave to cook or you could just smooth them out with a spoon. Leave to cook on low heat for 20 mins. - For the spaghetti, add 1 TSP salt & a dash of oil & cook spaghetti for 8-12 mins. - Serve with tomatoes, eggs, lime, fresh coriander, crispy fried onions & samosa pastry/pur.
