Georgian dishes are extremely delicious! This dish is usually served at the wedding as an appetizer with side of Georgian bread and sauce, because how colorful it is. Pkhali is a dish that is made out of minced vegetables and walnut paste, which makes it moldable into beautiful creations. For walnut paste you will need: 400 g of raw walnuts 8 cloves of garlic 1 bunch of fresh cilantro For vegetable paste you will need: 3 beet roots(cooked and grounded up) 1 bunch of beetroot greens(chopped, cooked and finely minced) 1 300 g package of frozen spinach(cooked,drained and grounded up) 1 300 g package of frozen green beans(cooked, drained and grounded up) For each kind of Pkhali: ½ tsp Svanetian Salt : 🤍 ½ tsp of Utskho Suneli : 🤍 ½ tsp of Allepo Pepper flakes: 🤍 Salt and Pepper to taste. 1 tbsp of Red wine vinegar Form into balls and serve on the lettuce leaves! Ingredients: Fresh spinach 400 g Walnuts 50 g Onion 1 pc Parsley 6 g Cilantro 10 g Spicy herbs 4 g Spicy Dried paprika 4 g Three slices of garlic Pomegranate or cherry tomatoes for decoration Preparation: Chop the spinach and boil it for a few minutes. Then crushe using a blender Chop garlic, parsley and green cilantro finely. Mix them and add dried red pepper, salt and herbs. Add spinach mass and shelled walnuts. Then grind the whole mass using a blender (use a little water if it’s needed) or mince. Make balls patties from the mass and place them on a platter. Decorate the top with cherry tomatoes, pomegranate grains or walnuts.

Beet Greens with Walnuts - Charkhlis Potlis Pkhali (Red Pkhali) Beet greens with walnuts is a delicious and healthy Georgian pkhali appetizer dish. As have been well established in Georgian culinary traditions, hearty and healthy vegetables are substantive part of the diet. This time-tested recipe is simple to make and delicious. Deep maroon port wine color of stems and the fresh green color of the leaves makes a delightful contrast. Adding walnuts turns this pkhali into a dark earth tone creamy color spread. This delicious cabbage-based pkhali dish is an excellent appetizer on its own when you are having just a few friends over or as one of several dishes to start a big party. The tender cabbage, bright with fresh herbs and garnished with ruby red pomegranate seeds, brings beautiful color to the table. Рецепт на русском языке — 🤍 Ingredients: ▫️Young cabbage — 1 head ▫️Walnuts — 120 g ▫️Onion — 1 pc. ▫️Garlic — 2 cloves ▫️Cilantro — 30 g ▫️Khmeli-suneli — a pinch ▫️Salt, freshly ground black pepper — to taste ▫️Pomegranate seeds for decoration Process: 1. Cut the cabbage into 4 pieces. Boil water in a wide pot, add cabbage, cook until soft, about 5 minutes. 2. Chop the cilantro, onion and garlic. 3. Replace the cabbage in cold water to stop the cooking process. 4. Soak the chopped onion in the hot water in which the cabbage was boiled. This will make it softer. Transfer to the cabbage. 5. Pat the onions and cabbage dry with paper towels. Squeeze out excess water with your hands. 6. Grind cabbage, onion, cilantro, garlic and walnuts with a meat grinder. 7. Put the resulting mix on a sieve and squeeze out excess liquid with your hands. 8. Transfer the mix to a bowl, season with khmeli-suneli, salt and pepper. Stir. 9. Form oval dumplings the size of half a palm from the cabbage mass and place on a dish. Make a small indentation at the top with your thumb. Hi everyone, In this video I am showing how to make Georgian beets salad Pkhali. A tasty choice for lunch and/or dinner, as well as a side dish. Great addition to any event as well. I am going for sour cream instead of mayo. This may not be traditional way of making it. Also I am showing a smaller portion. Ingredients: 2 small beets 1.5 tbs of sour cream 1 small garlic clove few branches of cilantro 20 g of walnuts pinch of salt pinch of pepper Boil beets for at least 2 hours. Let them cool down. Grate them. Drain and squeeze with your hands, let the juice come out as much as possible. Add beets to the bowl. Grate garlic clove and walnuts, or you can use blender for each. Chop cilantro. Add all to the bowl with sour cream, salt and pepper. Mix. You can refrigerate for at least 15-20 minutes or serve right away. Enjoy! Даем остыть. Натираем на терке. Пропускаем через дуршлаг и придавливаем руками, чтобы стек сок как можно больше. Кладем свеклу в миску. Трем на терке орехи и зубчик чеснока, также можно использовать блендер вместо терки. Шинкуем кинзу. Добавляем все в миску со свеклой вместе со сметаной, солью и перцем. Перемешиваем. Рекомендуется поместить в холодильник минимум на 15-20 минут или можно подать сразу. Приятного аппетита!
